Saving Taco Tuesday with Duck Tacos

 

It’s Tuesday. What’s for dinner? Tacos.

Tuesday is supposed to be exciting. But, it’s not. Instead, an empty feeling has taken ahold of you. What was once an exciting break from the week made up of Corona’s, cilantro and friends is no more. Chicken, steak, and fish just aren’t getting the job done.

You type out a text to your main squeezes group chat, “maybe we should take a break from Taco Tuesday?”

Tuesday isn’t as hopeless as it looks. We’ve got an amazing duck taco recipe that can provide the boost you need.

Serves 4 - 8 ppl. Prep time: 70 min.  Cook time: 9 to 20 min.

TIP: we love DUCKCHAR cooked medium rare*

Ingredients
Salt (to taste)
Pepper (to taste)
1 tablespoon paprika
1 tablespoon cumin
1/2 cup lime juice
1 teaspoon cayenne pepper, or more to taste
1/8 cup olive oil
5 garlic cloves, minced
2 DUCKCHAR duck breasts
2 thinly sliced avocados
Lots of corn tortillas
1 white onion, chopped
Your favorite salsa
1 cup cilantro, chopped

Step 1 - Score skin. Just be sure not to cut into the meat.

Step 2 - Combine all ingredients in a large bowl. Add DUCKCHAR duck breasts and place in refrigerator for 1 hour.

Step 3 - Remove duck breasts from marinade.

Step 4 -  Cook DUCKCHAR duck breasts to desired doneness on grill. Place DUCKCHAR duck breasts on top rack or over indirect heat skin side down. Beware of flames.
Medium rare*: about 6 min.
Done: about 9 – 10 min.

Step 5 - Flip and cook skin side up.
Medium rare*: about 3 min or until internal temperature reaches 135° F.
Done: about 5 min or until internal temperature reaches 165° F.

Step 6 - Cover DUCKCHAR duck breasts loosely with foil on plate and let sit for 5 minutes. Cut and serve.

Step 7 - Heat up the tortillas and then combine duck, cilantro, onion, salsa, avocado to taste.
