Ingredients
DUCKCHAR Moulard Duck Breast
DUCKCHAR Duck Fat
1/2 cup fresh basil, chopped
1/2 cup fresh rosemary, chopped
4 tablespoons fennel
1 shallot, chopped
5 garlic cloves, minced
Kosher salt (to taste)
Pepper (to taste)
Cooking Directions
Step 1 - Combine 2 tablespoons of DUCKCHAR Duck Fat, basil, rosemary, fennel, shallot, garlic, kosher salt, and pepper in a bowl and mix thoroughly. Set aside for later.
Step 2 - Carefully cut a pocket into DUCKCHAR Moulard Duck Breast. Be sure not to cut to deep. Work slowly and make small incisions into the meat to gradually increase the size of the pocket for stuffing the duck.
Step 3 - Score the skin. Just be sure not to cut into the meat. Season both sides with salt and pepper
Step 4 - Preheat grill, oven or smoker to 400 degrees F. While it heats, fill duck breast “pocket” with stuffing mix.
Step 5 - Cook DUCKCHAR Moulard Duck Breast skin-side down for about 12 minutes or until the internal temp of the meat reaches 120 - 125 degrees F.
Step 6 - Sear duck skin-side down in a cast iron skillet over high heat until the internal temp reaches 130 - 135 degrees F. Finish by quickly browning the meat side.
Step 7 - Allow stuffed DUCKCHAR Moulard Duck Breast to rest for 5 - 7 minutes. Then slice and serve immediately. Enjoy!
