Preparing for the Smoke

Kamado-Style

Add lump charcoal to grill and place fire starter in the center of the charcoal. Once the grill is lit, create a two zone fire by moving all of the charcoal to one half of the grill. Next, add a handful of wood chips that have previously soaked in water for 30 minutes. Put the grill grate back on and place the DUCKCHAR on the opposite side of the charcoal over indirect heat. Charcoal Grills

Fill Chimney starter ⅓ of the way full with charcoal briquettes. When the charcoal is ready, place charcoal on ½ of the grill for indirect cooking setup. Next, place an aluminum pan adjacent to the charcoal grills. Fill the pan with 2-3 cups of water. The water assists in helping to achieve a low cooking temperature. Wait 30 minutes to 1 hour for the coals to burn down. In the mean time, soak a cup of wood chips in water for 30 minutes. When the coals are ready, put the moist wood chips on the coals. Put cooking grate back on and Place DUCKCHAR, skin side up, on the opposite side of the grill as the charcoal. Cover the grill. Do not open the grill unless you feel you need to add more coals. Smoking DUCKCHAR typically takes 70 to 80 minutes. You generally do not need to add more coals. Gas Grills

Your gas grill may come equipped with a metal smoker box. Look to the grill manufacturer’s directions for the most effective and safest way to use this device. If your grill does not have a metal smoker box, you can always purchase one as an add on here. Just place the smoker box on your cooking grate and add a handful wood chips that have been soaked in water for 30 minutes to the smoker box.
