Sweet 'n Spicy Moulard Duck Breast Sliders

Ingredients

Salt (to taste)
Pepper (to taste)
1 DUCKCHAR Moulard Duck Breast
1 TB olive oil
1 cup mushrooms, sliced
1 jalapeno, thinly sliced
BBQ sauce (to taste)
3 garlic cloves, minced
1 yellow onion, sliced
Spicy pickles, thinly sliced
1/2 cup fresh cilantro, chopped
Sriracha (to taste)

Cooking Directions

DUCK:
Step 1 - Score skin. Just be sure not to cut into the meat. Season both sides with salt and pepper.

Step 2 - Cook DUCKCHAR duck breasts to desired doneness on grill. Place DUCKCHAR duck breasts on top rack or over indirect heat skin side down. Beware of flames.
Medium rare*: about 6 min.
Done: about 9 – 10 min.

Step 3 - Flip and cook skin side up.
Medium rare*: about 3 min or until internal temperature reaches 135° F.
Done: about 5 min or until internal temperature reaches 165° F.

Step 4 - Cover duck loosely with foil (4 min). Cut into thin slices.

SLIDERS:
Step 1 - Toast buns.

Step 2 - In one pan, caramelize onions. In another, saute mushrooms with garlic.  

Step 3 - For jalapeno sliders, brush top bun lightly with sriracha. Stack duck, jalapeno, and fresh cilantro together.

For BBQ caramelized onion sliders, brush top bun lightly with your favorite BBQ sauce. Stack duck, mushrooms, caramelized onions, and spicy pickles together.
